Today we’re having a Mexican fiesta. Because what better way to greet a new week than with a bit of delicious Mexican food that will not only delight your senses but also keep you full. Whether it is after a rough morning at the office or at 4 a.m. after a night in the club (believe me, food tastes divine at that hour).
I was recently hanging out with a great Mexican gal and we were swapping information on the type of popular foods we have in our countries. And when I asked her what kind of food is popular in Mexico she answered: tacos! And not those from Taco Bell. Those are a lie! End of quote! So what is the truth about tacos? Are you curious to discover?
Taco= “plug” or “wad” a tiny hole. It can also be translated as “light lunch” in Mexican Spanish.
Taquería= taco shop in Spanish. The original term refered to street vendors but now this term refers to pretty much all the establishments where Mexican food is served.
Tortilla= although you might think at the Spanish tortilla, it is interesting to know that tortilla for tacos is different from the “tortilla con patatas”. Tortilla for tacos is made out of corn flour and it is the same as the one used for fajitas and burritos.
Taco Bell= Taco Bell is one of the most famous fast-food chains which started as Bell’s Hamburgers and Hot Dogs. Located in San Bernardino, California, Glen W. Bell created this place in 1950 and it first sold burgers, fries, hot dogs, shakes, etc. At that time Bell’s stand was located in a region where the Hispanic population was on the rise. So he took advantage of that and started selling crispy tacos for 19 cents/piece.

|1 1/2 pounds boneless beef top sirloin|
|1/2 teaspoon salt|
|1 teaspoon black pepper|
|crushed, red pepper|
|1 lime and 1 lemon|
|1 can tomatillos|
|2 fresh jalapeno peppers|
|4 tablespoons canola oil|
|1 can beef broth|
|12 corn tortillas|
|1/2 large onion|
|1 avocado -sliced|
|1 bunch fresh cilantro|
How to prepare it?
1. Start by placing the sliced meat into a bowl and season it with pepper (red and black) and salt. Drown the meat in lime juice and put it in the refrigerator for 30 minutes.
2. Separately, in a blender, put the tomatillo and jalapeno, pureeing it for 20 seconds. In a skillet put a tablespoon of oil, heat it and pour this mixture. Cook everything for 5 minutes, stirring constantly. Add the beef broth and let it simmer for 20 minutes. Put this mixture on a serving dish and go to the next step.
3. Heat another tablespoon of oil in a big skillet and add 1/3 of the beef, sauteing it for 1 minute. Put this too on the serving dish and do the same for the rest of the beef. While you do this, heat the tortillas in the oven.
4. As serving you can put 2 tortillas on top of each other, add the meet and top it with tomatillo mixture. Add some tomatoes, onions, cilantro and avocado. If necessary add a wedge of lemon for extra flavor.
