A small coalition of New York’s best Asian-American chefs and restaurant owners, frustrated by the recent violence against Asian Americans and the lack of media coverage, have launched a grass-roots initiative called #Enough is enough. The focus is on donating meals to homeless shelters that serve primarily Asian-American, black and brown populations while raising awareness. In addition to the food donations, the group organized a virtual cooking class on February 22nd. All 22 restaurants involved are small, popular local spots, many with no more than 30 seats, but together they do well the initiative’s mission: to show the power of collective action.

Fish cheek crab fried rice

Ingredients:

1 1/2 ounces canola oil
2 eggs
1 cup of cooked jasmine rice that has been dried overnight
1/4 tablespoon of salt
1/4 tablespoon of sugar
1/4 tablespoon of chicken powder, preferably Knorr
1 teaspoon soy sauce
4 ounces of crab meat
1 bunch of spring onions, chopped
Coriander for garnish

Step 1: Heat a large pan over high heat. Once it’s hot, add the oil. Reduce the heat to medium and add the eggs. Stir them until they are almost cooked through.

Step 2: Add the rice, being careful to break it open so it heats evenly.

Step 3: Add the salt, sugar, chicken powder, and soy sauce. Mix well.

Step 4: Add the crab meat. Once it’s heated through, remove the pan from the heat and add the spring onions.

Step 5: Garnish with coriander and serve.
